Beat eggs and add buttermilk. In a separate bowl, mix together dry waffle batter ingredients. Pour in wet egg and buttermilk mixture. Gently mix together until lumpy then fold in melted butter.
Shred SPAM® Classic and cheese on a box grater.
Heat a cast iron belgian waffle maker to 350° and pour 6oz of waffle batter, once hot.
Sprinkle 2 ounces of cheese and 2 ounces shredded SPAM® Classic over the cheese.
Cook until waffle is browned and crispy.
