SPAM® Frittata

If you’re having trouble waking up your taste buds for breakfast, we suggest this easy morning masterpiece made with hearty potatoes, green bell peppers and SPAM® Classic.

  • 1 7-ounce can SPAM® Classic 7 oz, diced
  • 1/2 cup coarsely chopped onion
  • 1/2 cup coarsely chopped green bell pepper
  • 3 tablespoons vegetable oil, divided
  • 2 medium potatoes, cooked, peeled and cubed
  • 10 pitted ripe olives, chopped
  • 6 large eggs
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  • 1.In 10-inch omelet pan or skillet, sauté onion and bell pepper in 2 tablespoons oil until lightly browned. Stir in SPAM® Classic, potatoes and olives; cook over low heat, stirring frequently, 5 minutes.
  • 2.Loosen food from bottom of pan. Add remaining 1 tablespoon oil; tilt pan to coat bottom.
  • 3.In bowl, mix eggs, water, salt and black pepper; pour over SPAM® mixture.
  • 4.Cover; cook over low heat 15 minutes or until frittata is set on top. With pancake turner, loosen edge and bottom; invert onto serving platter.
