Ingredients
  • 1 (12-ounce) can SPAM® Classic, cubed
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter or margarine
  • 1 head cauliflower (about 1 1/2 pounds)
  • 1 3/4 cups milk
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/2 cup shredded Swiss cheese
Directions
  1. Heat oven to 450ºF. Lightly grease 1 1/2-quart baking dish.
  2. Separate cauliflower into small florets. In a small amount of salted boiling water, cook the cauliflower until tender, then drain.
  3. In medium saucepan, melt butter; whisk in flour, salt and pepper until smooth, then whisk in milk.
  4. Cook over medium heat, stirring until mixture thickens and boils, and then stir in SPAM® Classic.
  5. Place cauliflower in baking dish. Add SPAM® mixture; stir to mix well. Sprinkle with cheese. Bake 8 to 10 minutes or until lightly browned.
