Ingredients
  • 1 (12-ounce) can SPAM® Classic, cut into thin strips
  • 4 cups corn tortilla chips
  • 1½ cups CHI-CHI’S® Thick & Chunky Hot Salsa
  • 2 cups shredded Chihuahua cheese or Monterey Jack cheese
  • 4 fried eggs
Directions
  1. In large skillet over medium-high heat, cook SPAM® Classic strips 3 to 5 minutes or until browned and crisped.
  2. Heat oven to 350°F. Lightly grease 13×9-inch baking dish.
  3. Layer half of the tortilla chips in prepared baking dish. Top with half of the cooked SPAM® Classic strips, half of the salsa and 1 cup of the cheese. Press layers gently down into casserole. Repeat with remaining tortilla chips, SPAM® Classic strips, salsa and cheese.
  4. Bake 30 minutes or until cheese is melted and golden brown. Top individual servings with 1 egg.

I made this recipe for my husband, who loves Mexican recipes and food. We really enjoyed it very much. It was the first spam recipe I've tried but it won't be my last. Normally I just fry it up and eat it plain but this has opened a whole new untried recipes. To the individual who gave this one star, it's a shame they didn't try it just because they thought the recipe was different than the picture. I can tell you the recipe is 100% correct with a fried egg on top and it was very tasty.

This was very good. I made as written not as shown. I did fry the spam some for texture. Next time I will try to make it as shown. :)

I looooove chilaquiles; it's easily my top 3. I've always loved spam this is such a great idea.. I also never thought to just use regular chips and pre-made salsa. This is such a great idea. 10/10 would recommend.

I have not made this but the recipe and the picture do not go together. The recipe calls for beaten eggs poured over but the picture shows eggs cracked on top.
