Ingredients
  • 1 (12-ounce) can SPAM® Less Sodium, cut into cubes
  • 1 (10 3/4-ounce) can cream of celery soup
  • 1 1/2 cups water
  • 1 tablespoon butter or margerine
  • 3/4 cup long-grain rice
  • 1 (10-ounce) package frozen peas
  • 1 (4.5-ounce) jar sliced mushrooms, drained
  • 1 cup shredded Cheddar cheese
Directions
  1. In a large skillet, combine the soup, water, and butter.
  2. Bring mixture to a boil.
  3. Add the SPAM® Less Sodium and rice.
  4. Reduce the heat, cover, and simmer for 18 minutes.
  5. Stir peas and mushrooms into skillet, then cover and simmer for 15 minutes or until the rice is cooked through and the peas are heated thoroughly.
  6. Sprinkle cheese over the rice mixture and cover. Let stand for 5 minutes or until cheese is melted.

I wanted to cook something with the Spam Lite I had in the cupboard and found this recipe. As is usual for me, I didn't have the right ingredients but I forged ahead with Cream of mushroom soup, Asian style mixed vegetables considerably larger than peas, Jasmine long grain rice and mixed cheddar and provolone cheeses. Apparently, this recipe is indestructible; it was delicious.

Any meal I can make that my 5YO will enjoy as much as my husband and me is a win in my book. Left out the mushrooms due to personal preference, and it was still a great meal.

We had everything for this recipe accept rice (yeah,I know!). We substituted with spaghetti noodles broken in fourths and fifths to create a smaller noodle. It was great and made leftovers for next day! We even better after sitting overnight! Will make again and again with rice or spaghetti!
