Asian SPAM® Slaw with Noodles

All your Chinese takeout favorites are combined into one delicious dish. Edamame, ramen noodles and an Asian honey vinaigrette create a fantastically seasoned soup. If you had a fortune cookie before this meal, it’d read “your taste buds are in for a treat.”

Ingredients
  • 1 (12-ounce) can SPAM® Less Sodium, diced
  • 2 (3-ounce) package ramen noodles, cooked and cooled (discard seasoning packet or use to season soup)
  • 1 (12-ounce) package chopped coleslaw blend
  • 1 (8-ounce) package frozen edamame shelled soybeans
  • 1/2 cup slivered almonds
  • 1/2 cup thinly sliced green onions

Asian Honey Vinaigrette:

  • 2/3 cup SKIPPY® Creamy Peanut Butter
  • 1/3 cup honey
  • 1/3 cup rice vinegar
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon water
  • salt and pepper, to taste
Directions
  1. In a large bowl, combine the ingredients for the Asian Honey Vinaigrette dressing; mix well, then set aside.
  2. In large skillet, cook SPAM® Less Sodium until crisp and lightly browned; set aside.
  3. Cook ramen noodles as package directs; cool and set aside.
  4. In large bowl, combine the SPAM® Less Sodium, noodles, coleslaw, edamame, almonds and green onions. Add the dressing and stir until combined.
  5. Refrigerate for several hours until ready to serve.
