SPAM® Wild Rice Salad

You will go wild over this salad! Seriously, if you were stuck out in the wild, you could assemble this recipe. It’s made with wild rice, carrots, cranberries, onions, pumpkin seeds, honey and more! Not to mention the wild flavor of SPAM® Classic. Enjoying this fresh salad will take you back to the wild roots of your great, great, great, great nomadic ancestors.

  • For Wild Rice Salad:
  • 6 cups chicken stock or broth
  • 1 1/2 cups wild rice
  • juice of 1 lemon
  • 1 12-ounce can SPAM® Classic or SPAM® Lite, diced
  • 1 cup match stick sliced carrots
  • 1/2 cup dried cranberries
  • 4 green onions, finely chopped
  • 6 cups chopped Romaine lettuce
  • 1/2 cup pumpkin seeds, toasted *
  • For Vinaigrette Dressing:
  • 3 tablespoons apple cider vinegar
  • 1/4 cup + 2 tablespoons canola oil
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • * If desired, sunflower seeds or slivered almonds may be substituted.


  • 1.In large stockpot, combine chicken stock or broth and wild rice. Bring to a boil.
  • 2.Reduce heat, cover and simmer for about 45 minutes and until the grains are just opened and tender.
  • 3.Drain any excess liquid from the rice and toss with the lemon juice. Set rice aside and cool.
  • 4.Sauté SPAM® Classic or Less Sodium in a large skillet until lightly browned; set aside to cool.
  • 5.Meanwhile, prepare vinaigrette. In small bowl, whisk together the cider vinegar, oil, honey, salt and pepper.
  • 6.To serve, in a large bowl, add rice, SPAM® Classic or Less Sodium, carrots, cranberries and green onions. Toss rice mixture with the vinaigrette and refrigerate for 1 hour.
  • 7.Serve rice mixture over Romaine and top with pumpkin seeds.
