Ingredients
  • 1 (12-ounce) can SPAM® Classic, cut into 8 slices
  • 2 tablespoons butter
  • 1 cup chopped cremini mushrooms
  • 1 cup chopped sweet onion
  • 2 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 4 cups cooked rice
  • 4 eggs, cooked sunny-side up
  • 3 tablespoons chopped Italian parsley
  • 3 tablespoons chopped green onion
  • ¼ cup diced Roma tomato, if desired
Directions
  1. In large skillet over medium heat, cook SPAM® Classic 3 to 5 minutes or until lightly browned and crisp. Remove from skillet.
  2. In same skillet, melt butter. Add mushrooms and onions and cook over medium-high heat 6 to 8 minutes or until golden brown and tender.
  3. Add beef broth and Worcestershire sauce to mushroom mixture; bring to boil.
  4. In small bowl, mix cornstarch with water to make a smooth paste. Add to pan, whisking until combined and thickened.
  5. Season to taste with salt and pepper.
  6. Divide rice among 4 plates. Place 2 SPAM® Classic slices on top of rice. Top with gravy and 1 egg.
  7. Garnish with parsley, green onion and tomato, if desired.

This was fantastic. I preferred it so much more over beef loco moco, which has a tendency to dry out and the gravy can be too oily depending on what kind of beef you get. I haven't had spam in years and this was just the perfect recipe. Delicious and well rounded. I wasn't going to comment, but I saw the one star review complaining about the egg thickness??? What is that? What does that even mean? Sounds like a you problem! Very upsetting that one ridiculous review could harm someone's business. I mean, it's one of the most successful companies, but I just had to comment about that!!

Never heard of a loco moco before but my coworker told me about one she had while in HI. I looked it up and had most things on hand. I didnt add mushrooms or scallions but it was very tasty otherwise! Will def add to my rotation of quick dinners!

Spam loco moco is seriously tasty! I find the Spam stays juicier than a regular burger patty and frying the onions/mushrooms in the same pan as the spam gives the gravy a deeper more savoury flavour. Spam converted me to using it in loco mocos. Toooo tasty :)

This is the perfect blend of everything a dish needs, including umami, thanks to the worchestershire. This dish will forever be in my repertoire. I suggest caramelizing the onions for a bit more sweetness, or adding a pinch of sugar while cooking the onions to sweeten the dish for the full flavor profile. I also use a spicy sauce, such as habanero, or sriracha, as a 'garnish' to finish it off, as you would eggs before you eat them. 100% recommend, and making over and over again.

Spam fries to perfection is crucial as it's saltiness accentuates the blend was of rice and add the silkiness of half fried egg, then this dish is phenomenal. Go spam!
