Huevos Chilaquiles
Ingredients
  • 1 12-ounce can SPAM® Classic cut into 1/2-inch cubes
  • 1 teaspoon coarsely ground pepper
  • 4 cups corn tortilla chips
  • 1 cup CHI-CHI’S® Thick & Chunky Hot Salsa
  • 8 beaten large eggs
  • 1 cup shredded Chihuahua cheese or Monterey Jack cheese
  • 1 cup sour cream

    Heat oven to 350°F.

    Place chips in 13x9-inch baking dish.

  3. 3

    In bowl, combine remaining ingredients; mix well. Pour over chips.

    Bake chilaquiles 25 to 30 minutes or until eggs are set.
