- 1 (12-ounce) can SPAM® Classic, diced
- 2 tablespoons canola oil
- 1 onion, finely chopped
- 2 large baking potatoes, peeled and diced
- ½ red bell pepper, chopped
- ½ green bell pepper, chopped
- ¼ cup fresh parsley, chopped
- ¼ teaspoon freshly ground pepper
- In 10-inch cast-iron skillet, heat oil over medium heat.
- Cook onions 3 minutes or until translucent.
- Add potatoes and cook 7 to 10 minutes or until golden.
- Stir in SPAM® Classic, red and green and bell peppers and cook until heated through and browned.
- Stir in chopped parsley and pepper.
