Green Eggs and SPAM® Classic

Would you eat them in the morning? You just might, with these scrambled green eggs whipped up with spinach, parsley, and a touch of parmesan for an herby, cheesy twist. Add a side of deliciously sizzled SPAM® Classic (no green ham here, just fried perfection), and you’ve got a breakfast even Sam I would approve of.

Ingredients
  • 1 (12-ounce) can SPAM® Classic, sliced
  • 2 cups packed baby spinach
  • 1 cup packed fresh parsley leaves
  • 3 tablespoons shredded Parmesan cheese
  • 1/3 cup olive oil
  • 1/2 teaspoon salt
  • 8 eggs, beaten
  • 2 tablespoons butter
Directions
  1. In large skillet, over medium-high heat, cook SPAM® Classic slices 3 to 5 minutes or until browned.
  2. In bowl of food processor place spinach, parsley and cheese. Process until very finely chopped. With processor running, drizzle in olive oil. Process 30 seconds to 1 minute or until oil is green and mixture is thoroughly pureed.
  3. Add salt to beaten eggs. Stir in ¼ cup spinach mixture. Reserve remaining spinach mixture for future use.
  4. In skillet over medium heat, melt butter. Add eggs. Cook 4 to 5 minutes stirring with rubber spatula, until eggs are cooked to desired doneness. Serve green eggs with SPAM® Classic slices.
