Polynesian Stir-Fry
Ingredients
  • 1 12-ounce can SPAM® Classic cut into cubes
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 8 fajita-size flour tortillas
  • 1 jar CHICHI’S® Diced Green Chillies
  • 4 large eggs
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1 chopped tomato
  • 2 cups whipping cream

The Polynesian islands are warm and inviting. This stirring stir-fry dish is warm and inviting as well; a sweet and sour taste experience featuring savory SPAM® Lite.

    Drain pineapple, reserving juice. Add water to juice to make 1 cup. Stir in sweet-and-sour sauce mix.

    In large skillet, sauté onion and bell pepper in oil over medium heat, stirring constantly, 4 minutes. Add SPAM® Lite and water chestnuts; cook 1 minute longer. Add sweet-and-sour sauce and pineapple; bring to a boil. Boil 1 minute.

    Serve stir-fry over hot rice.
