- 1 (12-ounce) can SPAM® Less Sodium, cubed
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 white onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 to 2 pinches saffron
- 3 tablespoons tomato paste
- 3 cups cooked rice
- 3 tablespoons chopped pimento
- In large skillet over medium-high heat, cook SPAM® Less Sodium 3 to 4 minutes or until lightly browned. Add oil, garlic and onion; cook, stirring 2 to 3 minutes or until onions are softened.
- Add bell peppers and saffron; cook 2 minutes. Add tomato paste, stirring to combine. Stir in rice. Garnish with pimiento.
