SPAM® Classic One Skillet Mac and Cheese

It’s time you upgraded to the latest version of Mac and Cheese. Hearty chunks of fried SPAM® Classic are tossed with creamy, cheesy macaroni and topped with toasted breadcrumbs. This easy one skillet meal is Mac 2.0.

Ingredients
  • 1 (12-ounce) can SPAM® Classic diced
  • 4 cups whole milk
  • 2 1/2 cups uncooked elbow macaroni
  • 2 cups shredded mild Cheddar cheese
  • 1/2 cup shredded part-skim mozzarella cheese
  • 2 ounces cream cheese
  • 4 tablespoons butter, divided
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon cayenne pepper
  • Pinch of nutmeg
  • 1 teaspoon salt
  • 1 cup Panko bread crumbs
  • 1 tablespoon chopped parsley, if desired
Directions
  1. Heat broiler to high.
  2. In large broiler-safe skillet, over medium-high heat, cook SPAM® Classic 2 to 3 minutes or until lightly browned. Remove from skillet.
  3. In same skillet, over medium heat, combine milk and macaroni. Bring to a simmer. Cook 5 to 6 minutes, stirring to prevent sticking, until macaroni is tender and mixture has thickened. Remove from heat. Stir in cheeses, 2 tablespoons butter, mustard, cayenne, nutmeg and salt. Stir in browned SPAM® Classic.
  4. In small microwavable bowl, melt remaining 2 tablespoons butter. Add breadcrumbs, stirring to coat. Sprinkle mixture on top of macaroni and cheese.
  5. Broil 3 to 5 minutes or until breadcrumbs are golden brown. Garnish with parsley if desired.

We really wanted to like this but it didn't end up that way. When I try a recipe for the first time, I always try to follow it exactly as written. This ended up VERY dry and pretty bland. The recipe said this would be 6 servings. It seemed more like 10-12 servings, to me. I will try this again but… next time I will reduce the amount of macaroni to about 1 1/2 cups. I'll add salt with the macaroni and milk. I'll use a sharp cheddar. I will probably omit the Panko topping.

I made the macaroni, spam and cheese and we loved it. I did not have the Dijon mustard or the bread crumbs, but I have made it twice now!
