Western Omelet

While you don’t have to be a cowboy to love our SPAM® Classic-filled Western omelet, you do have to have a cowboy-sized appetite. Otherwise, git along, little doggie. Git along.

  • 4 teaspoons butter or margarine
  • 1 12-ounce can SPAM® Classic diced
  • 1/4 teaspoon chili powder
  • 8 large eggs
  • 1 chopped large green bell pepper
  • 2 thinly sliced medium onions
  • 4 tablespoons milk
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil


  • 1.In medium skillet, sauté bell pepper and onions in oil until lightly browned. Stir in SPAM® Classic and chili powder until well mixed.
  • 2.For each omelet, in bowl, beat together 2 eggs, 1 tablespoon milk, 1/8 teaspoon salt and black pepper.
  • 3.In 8- or 9-inch omelet pan or skillet, melt 1 teaspoon butter; pour in egg mixture. Cook over medium heat, pushing cooked edge of omelet to center as egg sets and tilting pan to allow uncooked mixture to run to edge.
  • 4.When surface of omelet is set, spoon 1/2 cup SPAM® mixture on 1/2 of omelet; flip uncovered half over filling. Cook until bottom of omelet is browned.
