The Figgy Pizza

Put on your fancy pants because this delectable little flatbread recipe is straight out of a foodie magazine! Made with SPAM® with Bacon, pears, and fig jam, you’ll find yourself wanting to take out your phone to share foodie pics through all your social media accounts. That is if you can resist eating it before photographing it.

  • 2 (14x6-inch) soft lavash flatbreads
  • 1/2 cup fig jam
  • 1 firm, but ripe pear, thinly sliced
  • 1 (12-ounce) can SPAM® with Bacon, diced and sautéed
  • 1/2 cup thinly sliced red onion
  • 4 ounces goat cheese
  • 1/4 cup balsamic vinegar
  • 2 tablespoons fig jam
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped fresh basil


  • 1.Preheat oven to 350°F
  • 2.Line a large cookie sheet(s) with parchment paper. Lay out lavash flatbreads on a cookie sheet(s).  Bake 5 minutes and let cool. 
  • 3.Spread 1/2 cup of fig jam on evenly over the surface of the flatbreads. Top with pears, sautéed SPAM® with Bacon, red onion and dollops of goat cheese. Bake for 10-15 minutes or until flatbreads are crisp and lightly browned.
  • 4.Combine the vinegar, 2 tablespoons of fig jam and chopped garlic. Drizzle flatbreads with sauce and top with chopped fresh basil.
