SPAM® Croissant Surprise

These aren't your aunt’s croissants. Because chances are, those croissants weren’t filled with a scrumptious surprise. What's the surprise? Well, we don't want to ruin it — you'll have to make it to find out.

  • 1 12-ounce can SPAM® Classic, sliced 1/4-inch thick for 6 slices
  • 1 cup peanut oil
  • 1/4 cup Dijon mustard
  • 1/3 cup peach preserves
  • 1/2 teaspoon fresh thyme, chopped finely
  • 1 tablespoon water
  • 6 croissants
  • 2 egg whites
  • 1 cup plain panko bread crumbs
  • 1/2 cup pecans, finely chopped (no large pieces)
  • 1/4 cup sesame seeds
  • 1/4 teaspoon chili powder


  • 1.Preheat peanut oil in nonstick skillet. Whisk together Dijon mustard, peach preserves, thyme and water. Cool in fridge. Beat egg whites until it begins to peak.
  • 2.Slice 6 croissants. Mix together panko bread crumbs, pecans, sesame seeds and chili powder.
  • 3.Dip SPAM® Classic slices in egg mixture, dip in panko bread mixture and then use your hand to press mixture into SPAM®. Fry until lightly browned on one side and then flip to brown on other side. Place on cooling rack.
  • 4.Lightly toast croissants in skillet with butter. Take toasted croissants and spread both sides with Dijon mustard mixture, add slice of SPAM®.
