SPAM® Bánh Mi with Smoked Mayo

Nashville hot chicken has had it’s fifteen minutes of fame, it’s time for Nashville hot SPAM® Bánh Mi! Mi, oh my, we’re talking SPAM® Classic on a French Baguette with carrot salad and topped with a smokey mayo! It’s sounds so good, it may even rival the sound of Nashville music.

  • 1 can SPAM® Classic
  • Smoked Mayo: 1 cup canola oil
  • 2 egg yolks
  • 1 tbsp fresh lemon juice
  • salt and pepper to taste
  • Sandwich: 1 each French Baguette
  • 1 pound smoked pork
  • 1/2 pound carrot & cilantro salad (recipe to follow)
  • 1/4 cup ponzu (can be found at most specialty stores & Hoisin is a great substitute as well)
  • 1 each jalapeño (sliced thin)


  • 1.For the Smoked Mayo: Emulsify oil and egg yolks. Add lemon juice, salt and pepper to taste.
  • 2.For the Smoked Mayo: Place 1 cup of mayo in cold smoker (less than 100°) for 30 minutes. Stir every 5-10 minutes.
  • 3.For the Carrot and Cilantro Salad: Grate 1/2 pound of carrots.
  • 4.For the Carrot and Cilantro Salad: Pick the leaves of 1/2 a bunch of cilantro.
  • 5.For the Carrot & Cilantro Salad: Put grated carrots and cilantro and jalapeño in a medium size bowl.
  • 6.For the Carrot & Cilantro Salad: Dress with 2 tablespoons of sesame oil and 4 tablespoons of rice vinegar, pinch of salt and fresh black pepper and white sugar. Toss to coat. Set aside.
  • 7.For the Sandwich: Cut baguette lengthwise.
  • 8.For the Sandwich: Spread spicy mayo on bottom piece of bread, layer sliced or shaved SPAM® Classic on top of mayo.
  • 9.For the Sandwich: Top with warm smoked pork, Dress pork with ponzu (or Hoisin).
  • 10.For the Sandwich: Next add carrot & cilantro salad. Place top piece of baguette on carrots.
  • 11.For the Sandwich: Cut sandwich into 4 portions.
