  • 8 - 1/4-inch slices SPAM® Classic
  • 8- 4-inch flour or corn tortillas
  • 2 ounces minced red bell pepper
  • 1 small red onion
  • 1 teaspoon of minced fresh jalapeño
  • 1 tablespoon chopped cilantro
  • 4 ounces chopped pickled onion
  • 2 ounces julienne radish
  • juice of 2 limes
  • juice of 2 oranges
  • 1 ounce achiote paste
  • sea salt
  • fresh black pepper
  • canola oil
  • 8 ounces fresh pineapple (keep in 1 big piece)
  • 2 green onions (sliced thinly)


  • 1.For the Achiote Marinade: In small bowl stir together orange juice and achiote paste. Season with salt and pepper.
  • 2.For the Achiote Marinade: Pour marinade into plastic zip-top bag. Add SPAM® slices, seal and marinate one hour.
  • 3.For the Grilled Pineapple Salsa: Heat grill over high heat. Brush pineapple with a thin coat of canola oil. Season with salt and pepper.
  • 4.For the Grilled Pineapple Salsa: Grill pineapple 3 to 4 minutes on each side. Let pineapple stand for 15 minutes (room temperature).
  • 5.For the Grilled Pineapple Salsa: Chop pineapple and place in small mixing bowl. Add red onion, red bell pepper, cilantro, jalapeño, and lime juice, stirring to combine. Season with salt and pepper. Set aside.
