Mini SPAM® Arepas

Make some mini arepas with major flavor. Cook up soft corn flour patties golden brown on the griddle. Then top them with a mouthwatering mix of SPAM® Chorizo, diced tomatoes and scrambled egg. That’s how you make an easy maize dish taste simply amazing.

Ingredients

  • 2 cups Masarepa (pre-cooked corn flour)
  • 2 teaspoons salt
  • 1 ½-2 cups warm water
  • oil for pan frying
  • 1 (12-ounce) can SPAM® Chorizo finely chopped
  • 1 (14.5-ounce) can petite diced tomatoes, drained
  • 4 eggs, scrambled
  • 1 avocado, pitted, peeled and sliced
  • ½ cup crumbled queso fresco

Directions

  • 1.In large bowl, combine corn flour and salt. Stir in enough water to form a soft dough. Divide dough into 8 balls; flatten into patties about 3 ½- inches wide.
  • 2.On greased griddle, place patties; cook over medium heat 3 to 5 minutes or until browned on bottom. Turn and brown other side.
  • 3.In large skillet over medium-high heat, cook SPAM® With Chorizo 3 to 5 minutes or until browned. Stir in tomatoes and cook 2 to 3 minutes or until heated through.
  • 4.Top each arepa with SPAM® With Chorizo mixture, eggs, avocado and queso fresco.
