I Love SPAM® Muffins

  • 2 12-ounce cans SPAM® Classic, divided
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups cornmeal
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 2 cups milk
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup canned whole kernel corn
  • 1 cup shredded Colby Jack cheese


  • 1.Heat oven to 400ºF. Lightly coat heart-shaped muffin cups or pans with cooking spray.
  • 2.Cut 1 can SPAM® Classic into 8 slices.
  • 3.In bowl, stir together flour, cornmeal, sugar and baking powder.
  • 4.In separate bowl, whisk together milk, oil and eggs. Make well in center of dry ingredients. Pour in milk mixture; stir until well mixed.
  • 5.Dice remaining SPAM® Classic. Stir diced SPAM® Classic, corn and cheese into cornmeal mixture.
  • 6.Fill each muffin cup two-thirds full with batter. Bake 15 to 20 minutes or until wooden pick inserted into center of muffin comes out clean.
  • 7.Meanwhile, in skillet, cook sliced SPAM® Classic until golden brown. Cut slices into small heart shapes using small heart-shaped cookie cutter. Place 1 heart on each muffin before serving.
