What does "au Gratin" mean anyway? Well, we asked the internet and it said, "sprinkled with grated cheese and browned." So we invited the internet over to try this delicious dish but the internet was too busy and emailed back, "thanks, maybe some other time."

  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter or margarine
  • 1 12-ounce can SPAM® Classic, cubed
  • 1 head cauliflower (about 1 1/2 pounds)
  • 1 3/4 cups milk
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/2 cup shredded Swiss cheese


  • 1.Heat oven to 450ºF. Lightly grease 1 1/2-quart baking dish.
  • 2.Separate cauliflower into small florets. In small amount of boiling salted water, cook cauliflower until tender; drain.
  • 3.In medium saucepan, melt butter; whisk in flour, salt and pepper until smooth. Whisk in milk. Cook over medium heat, stirring, until mixture thickens and boils. Stir in SPAM® Classic.
  • 4.Place cauliflower in baking dish. Add SPAM® mixture; stir to mix well. Sprinkle with cheese. Bake 8 to 10 minutes or until lightly browned.
