The ancient Aztec Náhuati people named the quesadilla “tlaxkalpocholi.” These days, the dish is not only a lot easier to spell, it’s a lot tastier, too — when it’s made Southwest style with shredded Monterey Jack cheese and diced SPAM® Classic.

  • 1.In large bowl, stir together SPAM® Classic and cheese. Spoon SPAM® mixture over 3 tortillas. Cover with remaining 3 tortillas.
  • 2.On lightly greased griddle, cook 1 quesadilla at a time over medium-high heat until lightly browned and cheese is melted.
  • 3.Cut each quesadilla into 6 wedges. Serve with guacamole and salsa, if desired.
