The name of this recipe rhymes. It comes from France where there’s mimes. A delicious twist on the French Ham and Cheese. It’s packed with flavor that’s guaranteed to please. Just ask the mimes they know it’s a hit. Seriously, they can’t stop talking about it.

Ingredients

  • For the Mornay Sauce: 1 1/4 ounces butter
  • 1/4 cup onion
  • diced
  • 1 ounce flour
  • 2 cups half & half
  • 1 bay leaf
  • 2 black peppercorns
  • 1 clove
  • Nutmeg
  • stir in grated
  • 2 ounces Emmenthaler cheese
  • grated
  • 3 ounces SPAM® Classic
  • sliced
  • 2 slices of Emmenthaler cheese
  • 1 egg
  • 2 slices bread

Directions

  • 1.In heavy duty saucepan, cook onions in the butter until translucent.
  • 2.Add the flour, stirring for 2 minutes.
  • 3.Whisk in half and half, until smooth.
  • 4.Bring to a simmer, whisking, and add the spices. Continue cooking the sauce over low heat.
  • 5.Simmer the sauce for 30 minutes, scraping the corners with a rubber spatula.
  • 6.Season the sauce with the nutmeg and white pepper.
  • 7.Strain the sauce into a clean saucepan.
  • 8.Whisk in the cheese and mix until melted.
