SPAM® Corn Dogs with Barbeque Thousand Island Dressing

Texas may be the lone star state, but this Texas Corn Dog recipe has 5 star taste. Corn Dogs are a favorite at the Texas State Fair, so by switching those dogs out with SPAM® Jalapeño and rode off into the sunset. Don’t mess with these delicious little doggies.

  • 1 cup mayonnaise
  • 2 tablespoons ketchup
  • 4 tablespoons barbeque sauce
  • 1 tablespoon white vinegar
  • 2 teaspoons sweet pickle relish
  • 1 teaspoon finely minced white onion
  • 1 teaspoon dry mustard
  • 1 tablespoon capers
  • 1 teaspoon garlic
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon parsley
  • 1 tablespoon lemon juice
  • Corn Dogs:
  • 1 (12-ounce) can SPAM® Jalapeño
  • 4 cups vegetable oil
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon vegetable shortening
  • 1/3 cup milk
  • 1 egg
  • 8-10
  • 4-inch skewers
  • 1 hardboiled egg (chopped fine)
  • 1 teaspoon chives (snipped)
  • salt and pepper (to taste)


  • 1.Cut SPAM® Jalapeño into 2 inch by ¾ inch pieces; insert skewers into the end, halfway through each block and reserve. In large saucepan over medium heat, add oil and heat to 350°.
  • 2.
    In medium size mixing bowl, add flour, cornmeal, baking powder, salt, and sugar, stir to combine. Add shortening and cut in with a fork until size of small peas.
  • 3.Add the milk and egg, stirring to combine. Pour batter mixture into a tall glass.
  • 4.Dip the SPAM® Jalapeño into batter; let excess batter drip into glass.
  • 5.Gently drop battered SPAM® dogs into the hot oil and fry for 2 minutes, until golden brown. Remove from the fryer and place on a paper towel to drain excess oil.
  • 6.Serve with Barbeque Thousand Island Sauce and enjoy!
