Pierogi SPAM® Chowder

We poured all our heart into this recipe. No really, we used marinated artichoke hearts. We also poured heavy cream and crumbled Hormel® Fully Cooked Bacon into it. We know you’ll love this pierogi chowder with all your heart. And we mean your real heart, not your artichoke heart.

Ingredients

  • 7 tablespoons butter, divided
  • 1 cup diced yellow onions
  • 1 (12-ounce) can SPAM® Lite
  • 1/3 cup all purpose flour
  • 3 cups chicken broth
  • 1 1/2 cups frozen corn
  • 1 (6-ounce) jar marinated artichoke hearts, drained and chopped
  • 1 (12.84-ounce) box frozen mini Pierogi*
  • 1 cup heavy cream
  • 2/3 cup heated and crumbled HORMEL® Fully Cooked Bacon
  • * Large pierogis may be cut in half and used OR use refrigerated cheese tortellini.

Directions

  • 1.In a large stockpot, melt 1 tablespoon of butter over medium heat. Add onions and SPAM® Lite. 
  • 2.Cook until onions are translucent and SPAM® Lite is lightly browned. Remove from heat and set aside. 
  • 3.Add remaining butter to the stockpot and cook until melted. Whisk in flour and cook and stir for 2 minutes. Slowly whisk in broth. 
  • 4.Continue cooking over medium heat. Add SPAMTM mixture, corn and artichokes. Bring mixture to a boil. 
  • 5.Add pierogi and cook until tender, 3-5 minutes. Add heavy cream and cook until heated through. 
  • 6.Serve in bowls and top with crumbled bacon.
