Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1/2 cup minced yellow onion
  • 1 clove garlic, crushed
  • 1 (12-ounce) can SPAM® Hot & Spicy, diced
  • 1 (28-ounce) can peeled whole tomatoes, drained
  • 2 teaspoons sugar
  • 2 tablespoons tomato paste
  • 3/4 cup chicken stock or broth
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground pepper
  • 1 (16-ounce) package linguine, cooked al dente and drained
  • 1/2 cup freshly grated Parmesean cheese

Directions

  1. In medium heavy skillet, heat oil over medium-high heat. Stir in onion; cook 5 to 6 minutes or until onion is tender but not browned. Add SPAM® Hot & Spicy and garlic; cook 5 minutes longer.
  2. Stir in tomatoes, breaking apart with wooden spoon. Add stock, tomato paste and sugar; mix well. Stir in salt and pepper; reduce heat. Simmer 30 minutes. Stir in linguine and cheese.
