Ingredients

  • 1 (12-ounce) can SPAM® Classic, cubed
  • 1 pound ziti, cooked to al dente and drained
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons kosher salt
  • 2 teaspoons pepper or to taste
  • 1 teaspoon crushed red pepper flakes or to taste
  • 1 pound Roma tomatoes, cubed
  • 1/2 cup vodka
  • 3 cups regular or fat-free half-and-half
  • 1/2 cup torn fresh basil
  • 1 large ball fresh mozzarella cheese, cubed
  • 1/2 box frozen baby sweet peas
  • Chopped fresh parsley
  • Shredded Parmesan cheese

Directions

  1. In skillet, sauté SPAM® Classic, onion, garlic, salt, black pepper and red pepper flakes over medium heat. Stir in tomatoes; simmer 5 minutes.
  2. Stir half-and-half and vodka into skillet. Bring to a simmer. Add basil, parsley and additional salt and black pepper, if desired.
  3. Two minutes before serving, add peas and mozzarella cheese to SPAM® mixture. Toss with ziti. Sprinkle with Parmesan cheese.
