Ingredients

  • 1 (12-ounce) can SPAM® Lite, diced
  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 1 (4-ounce) package fresh mushrooms, diced
  • 1 (6-ounce) can tomato paste
  • 18 ounces water (fill tomato paste can 3 times)
  • 1 tablespoon chili powder
  • 1 ( ) tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 (16-ounce) box penne or rigatoni
  • 1 cup shredded Parmesean cheese
  • 1 (8-ounce) package shredded mozzarella or Swiss cheese

Directions

  1. In large skillet, cook SPAM® Lite until lightly browned. Remove from skillet.
  2. In same skillet, cook onion, bell pepper and mushrooms 2 to 3 minutes or until just tender. Remove from heat.
  3. In medium bowl, mix tomato paste and water until smooth. Stir in sugar, chili powder, salt, garlic powder, oregano, Italian seasoning and black pepper. Add mixture to skillet with vegetables. Simmer 10 to 15 minutes, adding water if needed. Stir in SPAM®.
  4. Heat oven to 350ºF. Coat 13x9-inch casserole with cooking spray.
  5. In boiling lightly salted water, cook penne according to package directions; drain.
  6. Stir SPAM® mixture and 1/2 cup Parmesan cheese into penne; pour into casserole. Sprinkle with remaining 1/2 cup Parmesan cheese and the mozzarella cheese.
  7. Bake casserole 15 to 30 minutes or until cheese is lightly browned.
