Cheesy SPAM and Artichoke Rolls

Ingredients

  • 2 (12-ounce) cans SPAM® Classic, cut into 1/2-inch cubes
  • 3 ounces oil-packed sun-dried tomatoes, minced
  • 1 (16-ounce) box lasagna noodles
  • 2 cups ricotta cheese
  • 2 large eggs
  • 1/2 cup grated Parmesan or Romano cheese
  • 1 (10-ounce) jar artichoke bruschetta
  • 1 (26-ounce) jar meat-flavored spaghetti sauce
  • 1 cup shredded mozzarella cheese

Directions

  1. Heat oven to 350ºF.
  2. In medium skillet, sauté SPAM® Classic over medium-high heat 4 minutes or until lightly browned.
  3. In large stockpot of boiling lightly salted water, cook lasagna noodles according to package directions; drain.
  4. In small bowl, mix ricotta cheese, eggs, Parmesan cheese and sun-dried tomatoes until combined.
  5. In 11x8-inch (2-quart) baking dish, pour spaghetti sauce; spread to cover.
  6. Coat large work surface with nonstick spray. Lay out 1 lasagna noodle; spread with 3 tablespoons ricotta mixture. Top with 1 heaping tablespoon artichoke bruschetta down center over ricotta cheese. Sprinkle several SPAM® cubes over artichoke mixture. Starting with short side, roll up noodle. Place in baking dish.
  7. Repeat spreading, layering and rolling until baking dish is well packed with pinwheels (about 12 to 14 pinwheels). Cover tops of pinwheels with mozzarella cheese. Bake 30 minutes or until cheese is browned and sauce is bubbly.
