Ingredients

  • 3 1/2 cups water
  • 24 asparagus spears, ends removed and cut on diagonal into 1-inch pieces
  • 8 ounces penne rigate pasta
  • 2 tablespoons olive oil
  • 1 (12-ounce) can SPAM® Classic, cut into 1/3-inch slices
  • 2 cloves garlic, coarsely chopped
  • 12 whole vine-ripened cherry tomatoes, cut into quarters
  • 1/2 cup fresh basil, cut into ribbons
  • 1 tablespoon grated Pecorino Romano cheese
  • 1/4 teaspoon pepper

Directions

  1. In 4.2-quart saucepan, bring water to a boil over medium-high heat. Add asparagus; blanch 30 to 60 seconds. With slotted spoon, transfer asparagus to small bowl. Reserve 1/2 cup asparagus cooking water.
  2. In same saucepan of boiling asparagus water, cook penne about 11 minutes; drain.
  3. In same saucepan, heat oil over medium-high heat. Add SPAM® Classic; sear until golden on each side. Remove to paper towel; cool slightly. Cut each slice into 16 pieces.
  4. In saucepan, add garlic to hot oil; cook over medium heat until garlic is lightly golden. Add SPAM®, tomatoes, basil, asparagus and penne; mix well. Cook until heated thoroughly. Stir in reserved 1/4 cup cooking liquid, the cheese and pepper. Serve hot.
