SPAM and Spaghetti Mock Amatriciana

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, peeled
  • 2 cloves garlic, minced
  • 4 slices bacon, diced
  • 1/2 (12-ounce) can SPAM® Classic, diced
  • 1 red onion, thinly sliced
  • 1/4 teaspoon crushed red pepper flakes or to taste
  • 2 tablespoons red wine vinegar
  • 1 (28-ounce) can crushed tomatoes
  • 1 (16-ounce) package spaghetti
  • 4 ounces pecorino Romano cheese, grated
  • Salt and pepper, to taste

Directions

  1. Cook spaghetti according to package directions. Reserve 1 cup pasta cooking water; drain.
  2. Meanwhile, in large skillet, heat oil over medium-high heat.
  3. With side of large knife, smash 2 cloves garlic; add to oil. Cook, turning once, 2 to 3 minutes or until edges are browned. Discard garlic.
  4. Add bacon to skillet. Cook, stirring frequently, 3 to 4 minutes. Add SPAM® Classic; cook 4 to 5 minutes longer or until bacon and SPAM® are browned and slightly crispy. With slotted spoon, remove SPAM® mixture, leaving oil and drippings in skillet.
  5. Add onion, red pepper flakes, salt and black pepper to skillet. Sauté 3 to 4 minutes. Add minced garlic; cook 1 minute longer or until onion is softened. Add vinegar; stir to scrape browned bits from bottom of skillet. Stir in tomatoes; cook 5 minutes more or until sauce is slightly thickened.
  6. Add spaghetti to skillet; toss until coated. Add cheese; toss again. Add enough of reserved cooking water to thin sauce if too dry or thick. Serve with additional cheese for garnish, if desired.
