Creamy Cajun Shrimp and SPAM Pasta

Ingredients

  • 1 (12-ounce) can SPAM® Classic, diced
  • 1 pound shrimp, peeled and deveined
  • 1 (16-ounce) package angel hair pasta
  • 1/2 cup butter
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 small yellow onion, diced
  • 3 cups whole milk
  • 1/3 cup Cajun seasoning or Old Bay seasoning
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground red pepper (cayenne), if desired
  • Salt and pepper, to taste

Directions

  1. Cook angel hair pasta according to package directions; drain.
  2. In large skillet, melt butter over medium-high heat. Add SPAM® Classic; sauté 3 minutes or until slightly browned. Reduce heat to medium; add onion. Cook 3 minutes longer or until onion softens. Add shrimp and garlic; cook, stirring, 2 minutes more.
  3. With slotted spoon, transfer shrimp and SPAM® to plate. Add Cajun seasoning and flour to skillet; cook, whisking constantly, 3 minutes. Slowly add milk, stirring until thickened. Add lemon juice, cayenne, salt and black pepper.
  4. Return shrimp and SPAM® to skillet. Add pasta; toss until coated evenly. Garnish with chopped fresh parsley, if desired.
