Ingredients

  • 1/4 cup olive oil
  • 9 green onions, cut into 1/4-inch slices
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon ground cumin
  • 2 cups rice
  • 2 (14.5-ounce) cans chicken broth
  • 1 (12-ounce) can SPAM® Classic, cut into 2x1/4-inch strips
  • 1 (10-ounce) package frozen peas, thawed and drained
  • 1/2 cup chopped fresh parsley
  • 1 (3.5-ounce) package Hormel® Pepperoni
  • 1 red bell pepper, cut into 1/4-inch strips
  • 1 green bell pepper, cut into 1/4-inch strips

Directions

  1. In 3-quart saucepan, heat oil over medium heat. Add onions; cook, stirring occasionally, until tender. Add paprika and cumin; stir to blend. Add rice, coating grains with oil. Stir in broth. Reduce heat to low; cook 20 to 30 minutes or until rice is tender and all liquid is absorbed.
  2. Meanwhile, in skillet, cook SPAM® Classic over medium heat, turning occasionally, 4 to 5 minutes or until SPAM® is heated thoroughly.
  3. Stir peas and parsley into rice mixture; transfer to serving bowl. Stir in SPAM®, pepperoni and red and green bell peppers. Serve at room temperature
