Horseshoe Lake Lookout SPAM and Potatoes

Ingredients

  • 1 (12-ounce) can SPAM® Classic, diced
  • 3 large potatoes, diced
  • Ketchup
  • Vegetable oil

Directions

  1. In skillet, heat oil. Add potatoes; fry until tender. Stir in SPAM® Classic. Heat thoroughly. Serve with ketchup.

Notes

  1. Just married and working as fire lookouts in Idaho for the Forest Service, my wife and I lived in a single 12x12-foot room that was at the top of a 55-foot high tower. Our food supply was flown up to the tower by helicopter once every two weeks. So, we stocked up on SPAM® and potatoes! We invented this recipe and still love it today after 46 years. We have story after story that we can tell about this wonderful adventure.
