Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon finely chopped peeled gingerroot
  • 3 cloves garlic, finely chopped
  • 3 Thai green chiles, finely chopped
  • 1 yellow onion, thinly sliced
  • 2 green onions, sliced diagonally, white and green parts separated
  • 1 (12-ounce) can SPAM® Less Sodium, cubed
  • 1 baby bok choy, sliced, leaves and stems separated
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 3 tablespoons light soy sauce
  • 3 cups cooked rice
  • 10 button mushrooms, thinly sliced
  • 1 tablespoon toasted sesame oil

Directions

  1. In wok, heat vegetable oil over high heat. Add gingerroot and garlic; reduce heat to medium-high. Cook, stirring constantly, until fragrant.
  2. Add chiles, yellow onion and white part of green onions; stir-fry until onions are translucent. Add SPAM® Less Sodium; stir-fry until SPAM® just starts to brown. Add bok choy stems, soy sauces and oyster sauce; mix well.
  3. Add rice to wok; stir to coat well and break up any lumps. Add mushrooms, green onion tops and bok choy leaves; stir-fry 1 minute or until until evenly mixed into rice. Stir in sesame oil. Serve hot.
