Coconut Yam CRISPAM

Ingredients

  • 2 cups sweetened flaked coconut
  • 1/3 cup + 2 tablespoons butter, chilled, divided
  • 2 (12-ounce) cans SPAM® Less Sodium
  • 1/2 cup + 2 tablespoons packed brown sugar, divided
  • 1 (8-ounce) package cream cheese, softened
  • 1 (40-ounce) can sweet potatoes, cut, drained
  • 1 cup chopped apples
  • 2/3 cup chopped cranberries
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned or quick-cooking oats
  • 1/4 cup chopped pecans, if desired

Directions

  1. Heat oven to 400ºF.
  2. Melt 2 tablespoons butter. In medium bowl, stir together coconut and melted butter. Grate 1 can SPAM®; gently stir into coconut mixture. Press mixture into bottom and halfway up sides of 13x9-inch glass baking dish. Bake 10 minutes.
  3. While crust cools, slice remaining can SPAM® into 1x1/4-inch pieces. In nonstick skillet, sauté SPAM® pieces over medium heat 5 minutes or until golden brown. Stir in 2 tablespoons brown sugar; heat until melted. Remove from heat.
  4. In large bowl, beat cream cheese and sweet potatoes with electric mixer on medium speed until well blended. Spread sweet potato mixture into crust; layer fried SPAM®, apples and cranberries.
  5. In bowl, combine flour, oats and remaining 1/2 cup brown sugar. Cut in remaining 1/3 cup butter until mixture resembles coarse crumbs. Stir in pecans. Sprinkle topping over filling SPAM® mixture. Bake 25 to 30 minutes or until hot.
