Coconut Yam CRISPAM

Ingredients

  • 2 cups sweetened flaked coconut
  • 1/3 cup + 2 tablespoons butter, chilled and divided
  • 2 (12-ounce) cans SPAM® Less Sodium
  • 1/2 cup + 2 tablespoons packed brown sugar, divided
  • 1 (8-ounce) package cream cheese, softened
  • 1 (40-ounce) can sweet potatoes, cut and drained
  • 1 cup chopped apples
  • 2/3 cup chopped cranberries
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned or quick-cooking oats
  • 1/4 cup chopped pecans, if desired

Directions

  1. Heat oven to 400ºF.
  2. Melt 2 tablespoons butter. In medium bowl, stir together coconut and melted butter. Grate 1 can SPAM®; gently stir into coconut mixture. Press mixture into bottom and halfway up sides of 13x9-inch baking dish. Bake 10 minutes.
  3. While crust cools, slice remaining can SPAM® into 1x1/4-inch pieces. In nonstick skillet, sauté SPAM® pieces over medium heat 5 minutes or until golden brown. Stir in 2 tablespoons brown sugar; heat until melted. Remove from heat.
  4. In large bowl, beat together cream cheese and potatoes with electric mixer on medium speed until well blended. Spread potato mixture into crust; layer fried SPAM®, apples and cranberries.
  5. In bowl, combine flour, oats and remaining 1/2 cup brown sugar. Cut in remaining 1/3 cup butter until mixture resembles coarse crumbs. Stir in pecans. Sprinkle topping over SPAM® mixture. Bake 25 to 30 minutes or until hot.
