Bavarian SPAM Casserole

Ingredients

  • 1/2 cup mayonnaise
  • 1 (10-ounce) can cream of mushroom soup
  • 1 teaspoon caraway seeds
  • 1 (16-ounce) can sauerkraut, drained
  • 4 cups cooked diced potatoes
  • 1/2 cup buttered breadcrumbs
  • 1/4 teaspoon paprika
  • 1 (12-ounce) can SPAM® Classic, diced

Directions

  1. Heat oven to 350ºF.
  2. In bowl, combine mayonnaise and soup; mix well.
  3. In separate bowl, stir together SPAM® Classic and 1/2 of soup mixture, the sauerkraut and caraway seeds. Spread mixture into 13x9-inch baking dish.
  4. Stir potatoes into remaining 1/2 of soup mixture. Arrange potatoes around edges of baking dish.
  5. In small bowl, mix breadcrumbs and paprika; sprinkle over potatoes. Bake 20 to 30 minutes or until hot.
