Avocado Mousse Salad

Ingredients

  • 2 large ripe avocados (about 3/4 pound each)
  • 1 (7-ounce) can SPAM® Classic, cut into chunks
  • 1/2 cup sour cream
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 2 drops hot pepper sauce
  • 1 (1/4-ounce) package unflavored gelatin
  • Juice of 1 lemon
  • Lettuce leaves
  • Pitted ripe olives, if desired

Directions

  1. Halve, pit and peel avocados; cut into chunks.
  2. In food processor bowl or blender container, combine avocados, SPAM® Classic, lemon juice, sour cream, salt and hot sauce; process until smooth.
  3. Soften gelatin in cold water; dissolve over boiling water. Stir in avocado mixture.
  4. Divide mixture evenly among 8 (1/2-cup) molds. Refrigerate at least 2 hours. Unmold onto lettuce-lined salad plates; garnish with olives.

  1. You can make this salad in individual molds or in one 4-cup mold.
