BBQ Queensland Steak and Marinated SPAM with Tropical Fruit Sauce

BBQ Queensland Steak and Marinated SPAM with Tropical Fruit Sauce

Ingredients

  • 1 (12-ounce) can SPAM® Classic, cut into 4 slices
  • 2 (10-ounce) filet steaks
  • 4 large prawns
  • 1 tablespoon garlic butter, melted
  • 3 cups mesclun salad greens
  • 1 avocado, pitted, peeled and sliced
  • 1 apple, cored and coarsely chopped
  • 1/2 cup diced mango
  • 1/4 cup Bing cherries
  • 1/4 cup sliced strawberries
  • 1/4 cup sliced kiwifruit, sliced
  • 1/4 cup cubed fresh pineapple
  • CARAPELLI® light olive oil
  • Salt and cracked black pepper, to taste
  • Juice of 1 orange
  • Watercress and lemon wedges, for garnish

Directions

  1. Brush grill grate with olive oil. Prepare grill for medium coals.
  2. Place steaks on grill; season with salt and pepper. Grill steaks to desired doneness.
  3. Grill SPAM® Classic until heated thoroughly and golden brown. Remove from grill; slice each piece in half diagonally.
  4. Meanwhile, in bowl, toss together prawns and garlic butter. Grill prawns 2 minutes on each side or until cooked through.
  5. In pan, combine apple, mango, pineapple, cherries, strawberries, kiwifruit and orange juice. Grill 2 minutes or until heated through.
  6. Place each steak on large round plate. Top each with grilled SPAM® and fruit sauce. Arrange salad greens and avocado on plates; top each salad with 2 prawns. Garnish with watercress and lemon wedges as desired. Serve immediately.
