Double Pork Loaf

Ingredients

  • 1 medium onion, chopped
  • 1/2 cup chopped celery
  • 2 tablespoons butter or margarine
  • 1 (12-ounce) can SPAM® Classic
  • 1 pound ground pork
  • 1 1/2 cups fresh breadcrumbs (3 slices bread)
  • 1/4 teaspoon salt
  • 1/4 teaspoon poultry seasoning
  • 1/8 teaspoon pepper
  • 1 large egg
  • 1 (8-ounce) can pineapple slices in syrup
  • 2 tablespoons packed light brown sugar

Directions

  1. Heat oven to 350°F.
  2. In medium skillet, sauté onion and celery in butter until tender.
  3. In food processor bowl, process SPAM® Classic until finely chopped.
  4. In bowl, combine SPAM®, sautéed vegetables, pork, breadcrumbs, salt, poultry seasoning, pepper and egg; mix well.
  5. Drain pineapple, reserving syrup; add 1/4 cup reserved syrup to SPAM® mixture. Mix well. Pack into 9x5-inch loaf pan. Bake 1 hour. Remove loaf from oven; increase oven temperature to 400°F.
  6. Drain juices from loaf pan; invert onto ovenproof platter. Halve pineapple slices; arrange on top of loaf.
  7. In bowl, combine brown sugar and 1 tablespoon reserved pineapple syrup; brush over pineapple slices. Bake 5 minutes. Spoon drippings over loaf. Let stand 5 minutes before slicing.

Notes

  1. This dish can be made using 2 cans SPAM® Classic instead of ground pork.
