Country SPAM Casserole

Ingredients

  • 1 (12-ounce) can SPAM® Classic, cubed
  • 1 onion, chopped
  • 1 (16-ounce) bag frozen mixed vegetables, thawed and drained
  • 2 (10.75-ounce) cans cream of potato soup
  • 1 (3-ounce) package chives-and-onion cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 3 cups prepared instant mashed potatoes

Directions

  1. Heat oven to 400°F.
  2. In skillet, sauté SPAM® Classic and onion over medium-high heat until browned.
  3. In bowl, combine vegetables, SPAM® mixture and soup; mix well. Spoon into 3-quart casserole.
  4. In bowl, mix mashed potatoes and cream cheese. Spread over SPAM® mixture; sprinkle with Parmesan cheese. Bake 25 to 30 minutes or until hot and bubbly.
