Breakfast SPAM Cakes

Ingredients

  • 1 can SPAM® Classic, or any variety, cut into small pieces
  • 2 cups frozen hashbrowns
  • 3/4 cup chopped green bell pepper
  • 1 tablespoon chopped onion
  • 2 cups shredded Cheddar cheese
  • 1 cup biscuit mix
  • 3 cups milk
  • 1/2 teaspoon pepper
  • 4 large eggs

Directions

  1. Heat oven to 350ºF. Grease muffin cups or 13x9-inch baking pan.
  2. Layer 1/2 of SPAM® Classic, the hashbrowns, bell pepper, onion and 1 cup cheese in muffin cups.
  3. In bowl, stir together biscuit mix, milk, pepper and eggs until blended. Pour over cheese. Sprinkle with remainder 1/2 of SPAM® Classic and 1 cup cheese. Cover; refrigerate at least 4 hours or overnight.
  4. Bake muffin cups 20 to 30 minutes or 13x9-inch pan 30 to 40 minutes or until golden brown and cheese is melted. Let stand 10 minutes.
