Ratatouille Pie

Ingredients

  • 1 pound zucchini
  • 1 pound eggplant, cut into cubes
  • 3 tablespoons vegetable oil
  • 1 large green bell pepper, coarsely chopped
  • 1 large onion, coarsely chopped
  • 2 cloves garlic, minced
  • 1 large tomato, peeled and coarsely chopped
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1 (7-ounce) can SPAM® Classic, diced
  • 1 (15-ounce) package refrigerated pie crusts (2 crusts)

Directions

  1. Heat oven to 425°F.
  2. Halve zucchini lengthwise; cut into 1-inch pieces.
  3. In large skillet, sauté eggplant and zucchini in oil, stirring frequently, 5 minutes. Mix in bell pepper, onion and garlic; cook, stirring frequently, 5 minutes longer. Mix in tomato, thyme, salt, black pepper and bay leaf. Cover; simmer 15 minutes.
  4. Add SPAM® Classic to skillet; cook uncovered 15 minutes. Cool slightly. Remove and discard bay leaf.
  5. Roll out 1 pie crust to fit 9-inch pie plate; fill with SPAM® mixture. Cover with remaining crust; seal and flute edges. Make several slits in top crust. Bake 20 minutes. Reduce oven temperature to 375°F.; bake 15 minutes longer or until lightly browned.
