Antipasto Salad

Ingredients

  • 1 (16-ounce) can garbanzo beans, drained and rinsed
  • 1 small green bell pepper, chopped
  • 1 small red onion, thinly sliced
  • 1 (2.5-ounce) can pitted ripe olives, drained
  • 1/2 cup Italian salad dressing
  • 4 cups torn romaine
  • 2 cups torn lettuce
  • 1 (12-ounce) can SPAM® Classic, diced
  • 1 (4-ounce) package Provolone cheese, cubed
  • 2 tomatoes, each cut into 6 wedges

Directions

  1. In small bowl, combine garbanzo beans, bell pepper, onion, olives and dressing; cover. Refrigerate at least 1 hour.
  2. In salad bowl, combine romaine and lettuce; add garbanzo beans mixture. Top with SPAM® Classic, cheese and tomatoes; toss gently. Serve immediately.
