Ingredients

  • 4 teaspoons butter or margarine
  • 1 12-ounce can SPAM® Classic diced
  • 1/4 teaspoon chili powder
  • 8 large eggs
  • 1 chopped large green bell pepper
  • 2 thinly sliced medium onions
  • 4 tablespoons milk
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil

    In medium skillet, sauté bell pepper and onions in oil until lightly browned. Stir in SPAM® Classic and chili powder until well mixed.

    For each omelet, in bowl, beat together 2 eggs, 1 tablespoon milk, 1/8 teaspoon salt and black pepper.

    In 8- or 9-inch omelet pan or skillet, melt 1 teaspoon butter; pour in egg mixture. Cook over medium heat, pushing cooked edge of omelet to center as egg sets and tilting pan to allow uncooked mixture to run to edge.

    When surface of omelet is set, spoon 1/2 cup SPAM® mixture on 1/2 of omelet; flip uncovered half over filling. Cook until bottom of omelet is browned.
