SPAM® & Gnocchi Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and shredded
  • 4 cups chicken broth
  • 1 (1-pound) package ready-made potato gnocchi
  • 1 12-ounce can SPAM® Classic, diced and sautéed
  • 1 (6-ounce) bag baby spinach leaves
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 cups half-and-half cream
  • Salt and freshly ground pepper, to taste

    In large pot, over medium-high heat cook onion, celery, garlic and carrots 5 minutes or until onion is softened.

    Add chicken broth; bring to simmer. Stir gnocchi into simmering soup. Cook 3 to 4 minutes or until gnocchi are floating. Stir in spinach and cook 1 minute or until wilted.

    In small bowl, combine cornstarch and cold water. Add cornstarch mixture and cream to soup. Cook 3 minutes or until soup is hot and thickens slightly. Season to taste with salt and pepper.
