SPAM® Jun Cakes
Ingredients
  • 1 12-ounce can SPAM® Classic, cut into 12 slices
  • 3 eggs beaten
  • 1 cup of flour
  • 1 cup of soy sauce
  • 1 tablespoon of minced garlic
  • 1/2 tablespoon of minced ginger
  • 1/2 cup of rice wine vinegar
  • pinch of sugar
  • 1 tablespoon of sesame oil
  • canola oil

Everyone knows SPAM® and eggs can't be beat. But Roy Choi came along and defied what everyone thought they knew. He gave SPAM® and eggs a Korean twist with soy sauce and sesame oil to make SPAM® jun cakes.

Directions

    set up your station with flour in a shallow bowl and beaten eggs in a separate shallow bowl.

    heat a pan and spoon in some oil.

  3. 3

    dredge the SPAM® in the flour and dust off then coat in the egg.

  4. 4

    place each SPAM® slice in the pan and cook on each side till light light brown or deep yellow on low to medium heat.

    reserve to a paper towel lined tray.

  6. 6

    repeat.

    if there is any egg left over then cook that in the pan like an omelet then remove to a cutting board and cool then slice thin into strips.

    whisk together the soy sauce, ginger, garlic, vinegar, sugar, and sesame oil.

    place the SPAM® cakes and egg strips on a platter and drizzle the sauce all over and enjoy.
