Ingredients

  • 1 pack of soba noodles cooked then shocked cold
  • 3 cups of kimchi, chopped and juice
  • 1 12-ounce can SPAM® Classic, julienned into thin strips
  • 2 cups of green onions, minced
  • 6 hard boiled eggs
  • 1 cup of fried shallots
  • 1 cup of grated daikon radish
  • 2 cups of soy sauce
  • 2 tablespoons of Sriracha
  • 2 tablespoons of sesame oil
  • 1 cup of rice wine vinegar
  • 1 tablespoon of grated garlic
  • 1 tablespoon of grated ginger

    make a sauce with the garlic, ginger, soy sauce, Sriracha, sesame oil, vinegar and puree then fold in the grated daikon.

    layer the bowls with noodles, julienned SPAM®, kimchi and juice, eggs, green onions, fried shallots, then drizzle sauce all over and mix and enjoy.

Did you know that kimchi is Korea's national dish? Roy Choi did, and he took it and ran with it to create kimchi SPAM® noodles. It's so good that it should be Earth's international dish. Or even the universe's interplanetary dish, because if extraterrestrials exist, they'd love this!
