If you can't handle the heat, get out of Roy Choi's kitchen. Because his Jalapeño SPAM® quesadillas call for not one, but two additional jalapeños. And Roy says it's best served with hot sauce. Call the fire department, because this recipe is on fire.
heat a pan with a dab of canola oil and cook the Jalapeño SPAM® on each side till golden brown and reserve on paper towel lined tray.
In the same pan add more oil and sauté the onions and jalapeño till caramelized and slightly jammy.
take the roasted garlic cloves and purée with cilantro, lime juice, pinch of salt, and a splash of water. It should be thick but spreadable.
on a pancake griddle, dab oil and lay down a tortilla and cover with cheese. you can do two at a time.
spread the roasted garlic jam on the other tortilla, then layer the Jalapeño SPAM® on the cheese and top with the sautéed onions and peppers.
place the jam spread tortilla on top and flip over.
caramelize to crispy on each side and remove, then repeat with remainder.
cut into slices and enjoy with hot sauce.
